弊社は、業務厨房でもっとも嫌われている作業に対応する試作自動システムを発表しました。戦略的事業コンサルティングとAIやロボット技術における経験を組み合わせて作られた「Turbo Clean」は、食品トレーの清掃と汚れた食器の洗浄工程を自動化します。
弊社はまず、自動化にもっとも適した厨房作業が何かを分析することで、商業的価値をもたらすだけではなく、上層部やスタッフも喜ぶ人に優しい自動化を特定しました。多くの業務配膳業者にインタビュー調査を行った結果、スタッフがもっとも自動化を望み、もっとも大きい事業利益をもたらす一つの工程が特定できました。それがトレーの清掃と食器の洗浄です。

この新しいカスタムメイドな自動化システムにより、顧客の事業は重要な知的財産（IP: intellectual property）を生み出しました。6秒間に1つの食品トレーを処理できる全く新しい厨房清掃手順です。デープラーニングを使ったこのシステムに、乱雑に置かれた考え得る全ての食器の組み合わせを何千ものトレーの画像を使って覚えさせました。マシンビジョンは、各トレーの食器と廃棄物を瞬時に認識するだけでなく、ボール、皿、グラス、カトラリーなどを分類することができます。もう少し先に進めば、Turbo Cleanは新しいバリエーションを認識する能力を持つことが可能となり、再構成することなく新しい食器やカトラリーを取り扱うことが出来るようになります。
